During a Culinary Internship with Benchmark Hospitality, you will have the opportunitiy to rotate around a multitiude of disciplines with on-the-job exposure in the following rotations:
  • Grill Station/Hot Line
  • Pastry Operations
  • Garde Manager
  • Pastry and Chocolate
  • Life Stations
Program participants will earn between $10.00 - $18.00 USD per hour and will be scheduled a minimum of 32 hours work per week. Overtime is paid at time and a half.
Participants on this program will be required to obtain a J-1 Intern or Trainee visa through Yummy Jobs and will be able to train for a period of time as outlined by Old Edwards Inn and Spa. Upon completion of the program, participants will have up to 30 days to travel within the United States.  Participants must then return to their home country upon completion of the program.
Chef Matt Hale brings a love for the use of fresh, regional ingredients to create inspiring menus at Skamania Lodge. Hale's experience growing large vegetable gardens and small fruit orchards, paired with an inherited family interest in cooking, led to a passion for always sourcing locally that he has continued to carry with him throughout his culinary career.

Dining is truly a delectable experience with breathtaking views of the Columbia River Gorge. The Cascade Dining Room is open seven days a week offering tantalizing selections for breakfast, lunch and dinner, as well as our legendary Sunday Champagne Brunch.
Lighter fare menu featuring delicious salads, burgers and wood-fired pizza. Try a regional craft beer or one of our delicious signature cocktails. Enjoy incredible views of the Columbia River Gorge inside and out, with seasonal seating on the outdoor patio.
Enjoy Skamania’s signature dishes wherever you wish. All packaged to go, the fantastic culinary selections on our take away menu can be enjoyed anywhere on or off property.
Greenside Grille is located outdoor at the golf course and is an excellent summer choice for a casual appetite and quick bites. 

For Matt Hale, Executive Chef at the Columbia Gorges acclaimed Skamania Lodge, farm to table cuisine is his forte.

Chef Hale has a great respect and enthusiasm for the beautiful ingredients found around Stevenson, WA.

Hale comes to Skamania Lodge having previously worked at Destination Hotels' The Resort at Squaw Creek in Lake Tahoe as the fine dining sous chef. From there, he moved on to banquet chef at Sandy's Pub, also located at The Resort at Squaw Creek, where he was quickly promoted to the executive sous chef.

While growing up in Sierra City, California, Hale learned to grow large vegetable gardens and small fruit orchards. This, paired with an inherited family interest in cooking, led to a passion for always sourcing locally that he has continued to carry with him throughout his culinary career.

Hale followed the call of cooking to Lake Tahoe Community College, where he received an Advanced Degree in Culinary Arts.

Executive Chef Bobby Moore's relationships with local farmers, food artisans, and foragers has inspired a talented culinary team that draws on its mastery of both modern and classic techniques.  Bobby and his team consistently prepare fresh and tasty dishes, using local ingredients native to Woodinville and Washington State.

We’re happy to have a kindred spirit, the internationally renowned Herbfarm Restaurant, on the grounds of Willows Lodge. Winner of AAA’s 5 Diamond award, The Herbfarm offers a unique, multi-course dining experience rich in the culinary heritage and bounty of the Pacific Northwest.
Each nine-course dinner is inspired by the season and accompanied by wine pairings. The day’s menu is finalized only hours before the meal to take full advantage of fresh ingredients at their peak—including produce and herbs harvested daily from The Herbfarm’s own kitchen garden. Local growers and producers provide wild mushrooms, heritage fruits, handmade cheeses and other rare treasures.
The menu is straightforward and beguiling, featuring Andrew Weissman's contemporary interpretations of classic dishes — fresher, brighter versions of traditional cuisine enlivened with unconventional Texas spirit.  We seek out the world’s finest ingredients and sometimes look no farther than our own backyard, where the herb garden brings just-picked flavors to your table. Local and organic ingredients change the menu as the seasons peak and wane, but the constants are quality, flavor, artistry in the kitchen and a warm welcome when you walk in the door.
SweetFire Kitchen features an open-air exhibition style kitchen with a wood fired pizza oven and with fare showcasing a twist on regional home-style cuisine along with signature dishes. The casual San Antonio dining venue offers indoor seating with spectacular views of the Texas Hill Country, al fresco dining overlooking Plaza San Saba and a full service bar with unique craft cocktails, an extensive wine list and draught beers. For groups, the private San Antonio dining area can accommodate 10 to 50 people and includes a large HD screen, perfect for presentations.
Unwind with amazing cuisine and hand-crafted cocktails at Primero Cantina. Primero offers a seamless indoor/outdoor setting to enjoy the views of the Texas Hill Country or watch a game, thanks to the perfectly placed TVs throughout the restaurant. Chef Abraham Proa takes the cantina feel and adds his spin by combining Tex Mex and Cantina Favorites to offer a fun and unique menu.
Patrons can expect scratch food offerings, a full bar and craft cocktail menu, and 24 beers on tap to cool off after a round of golf, or unwind after a day in the office.. Sports lovers can enjoy live broadcasts of all major sporting events on one of many extra-large 4K TV’s throughout the space.
Located in the lobby, adjacent to the lobby bar, you’ll find our charcuterie featuring the finest smoked meats, gourmet cheeses and small bites.
Located directly off the lobby, Sire Bar offers guests hand-crafted cocktails in a space that pays homage to La Cantera's King Ranch heritage. The full-service San Antonio bar is a brown forward bar with over 250 unique brown spirits and delicious charcuterie offerings and small bites.
Located in the Palmer Clubhouse overlooking the 18th green, The Palmer Grille offers continental breakfast and lunch daily. Join us after a round of golf at "The 19th Hole," also known as Jasper's Bar, for your favorite cocktail.
Handcrafted cold-pressed juices, mood-enhancing Lotus Wei elixirs, boosting breakfast preparations, and perfectly portioned lunches are all the conscious result of a collective passion for satisfying the soul through fresh and seasonal ingredients.
From the moment you walk through the door, you can tell Junction is different. The AAA Four Diamond and Wine Spectator Award certified, Junction, is a destination in itself.  A warm, comfortable setting provides the backdrop for a dramatic meal, orchestrated down to the finest detail by our talented chefs. The open kitchen offers a behind-the-scenes view of the artistry that goes into each plate. Some dishes are even prepared tableside for a more interactive restaurant experience.
Each night, one of our chefs acts as your personal tour guide, giving menu and wine suggestions and maybe even sharing a few culinary secrets. The menu at Junction changes seasonally based on the freshest ingredients available, including from our own organic vegetable and herb gardens. At Junction, you can count on inspired versatility and selections that appeal to a wide range of palates.

Creative and casual, The Tavern offers a tasty pub menu day and night. Inspired by the finest local ingredients from Burlington and nearby areas, our chefs take a fresh approach to pub favorites. The Tavern offers nightly specials Monday through Thursday and brunch on Sunday. Breakfast, lunch and dinner are served daily, and the bar is open every night.
The Tavern features an expanded bar area along with seasonal patio seating adjacent to the East Lawn and our vegetable and herb gardens. Enjoy your meal with a selection from our award-winning wine list, our extensive selection of Vermont microbrews or our hand-made specialty cocktail menu.
The hands-on classes at Cook Academy are perfect for cooks of every level, whether you spend all your free time in the kitchen or leave the cooking to someone else. Our renowned chefs love to share their passion for food and are patient, supportive instructors who guide you step by step through the preparation of a delicious meal. You can expect to acquire new cooking techniques or hone the skills you already have, plus learn industry insights that can help you entertain at home.

Classes are small, so each student gets personalized instruction. Most classes include a three- or four-course meal, and, best of all, you get to eat your results and take the recipes home with you. Class offerings vary throughout the year depending on the season and availability of fresh ingredients. Past courses have included cooking with Vermont beer, making fresh pasta, indoor grilling and vegetarian cooking. We also offer French and Italian wine classes that will make you an oenophile in record time.

Our Chef’s Kitchen classroom offers an intimate space for up to eight students. The JK Adams classroom has room for 12 or more.
